Herb Scones

A great alternative to bread, these tasty herb scones are quick and easy. Use whatever herbs you have, the cheese is optional. 10 mins to make 10 to bake!

Recipe for Herb scones - Pre-heat oven to 375 -400, depends on your oven, mine runs hot so I use 375. Lightly grease and flour a baking tray. 1/4 cup fresh herbs - Finely chopped - use any combination of whatever you have - rosemary/parsley/marjoram/ thyme OR 1/3 tsp. each dried herbs. 3 oz finely grated cheddar (optional). Pinch of paprika. 2 cups self-rising flour - you can use half wholewheat and add 1 tsp baking powder if you do. 2 Tbl butter - if using unsalted add 1 tsp sea salt. 6 Tbls milk - you can substitute nut milk - A little flour for dusting the board - METHOD - Place the flour and butter in a bowl. Use a pastry cutter or a fork to combine until the mixture becomes fine and looks almost like breadcrumbs. Add 1/2 the milk, mix in the herbs, the cheese if using, a sprinkle of smoked paprika, more milk and bring the dough together into a ball. Turn out on to a floured board. knead lightly. Add a little more flour if necessary. Roll out the dough to about 6" x 8". Cut into squares. Place them on to the baking tray (space for expansion). Brush with a little milk. Sprinkle a little paprika on top. Place into the hot oven. Bake for about 12 mins. I usually turn them at about 10 mins. for the last 2 mins of baking. Cool on a wire rack. Enjoy warm. You can freeze some and just warm them when you use.
