I planted my first field of greens 25 years ago, and I haven't been the same since! An edible garden opened new flavour possibilities in the kitchen; it changed the way I ate. It made me a more thoughtful cook, sharpened my styling skills and connected me to our food and rural community as nothing else had. As the garden grew into an organic farm, I began writing down recipes from our ever-evolving varieties of greens and vegetables, and this book is a collection of our favourites. Leafy greens and herbs are the inspiration for these salads and green meals, dips, sauces, spreads, dressings, drinks and other recipes. To further balance texture, flavour, additional layers of nourishment and the pure pleasure of eating deliciously, there is a wide range of grains, spices, nuts and wholesome ingredients from my homeland and other cultures. The recipes celebrate Jamaica's multicultural background that includes Africa, India, China, Europe, the Middle East and indigenous influences that encourage Jamaica's proud motto 'Out of Many, One People'.
